Carmine Giardini
Picture a young man leaving the quiet hills of Vittorito, Italy, with little more than a set of well-worn knives and generations of butchering wisdom passed down through his family. That was Carmine when he first arrived in Connecticut, honing his craft behind the butcher block.
But the sunshine called. In 1972, Carmine made his way to South Florida and opened a modest meat market in Pembroke Pines—a humble spot where locals soon discovered they could find cuts of meat worth talking about. What started as a simple promise of quality quickly became something more: the gathering place, the trusted name, the foundation of what would grow into a beloved restaurant family.
Four decades later, that same dedication to craft and community still sits at the heart of everything we do.
